Forget the sushi restaurant script. Marú runs on the izakaya model instead, the neighbourhood Japanese bar where sake cocktails do the heavy lifting and sushi comes a few pieces at a time, no ceremony attached.
Order loosely, stay late, keep going. This place gets better the later you show up.
