Manuel Fernández Aragón spent thirty years working in other people's restaurants before he opened this one on December 1, 2025.
He named it after Comté, his favorite French cheese, and built the list around wines and dishes he actually wants to drink and eat himself.

Absolutely amazing, a must visit when you're in Sevilla and love wine. The staff is super friendly and helpful and the food and wine is superb. Can't recommend enough!!

Excellent wine, great cheese, great iberico ham. Staff excellent. Lovely surroundings. Highly recommend. Muddled through with my high school level Spanish. Would love to come back to Seville just for this place. Top marks.
