A handful of staff run the whole process by hand here, and visitors can watch the roasting and grinding happen in the same room where the bars get wrapped. The cacao comes from Maya farmers in the Toledo District's mountains.
Jeff Pzena owns the operation, the same person behind Cotton Tree Lodge on the Moho River. The factory sits at 2 Front Street.
