Rooftop bar over the water, catch of the day, north-side Guanaja

Green Flash sits on the top level of Bo Bush's Island House, water on nearly every side. It's a beachfront hotel first, family-run, and the bar sticks to what works: catch of the day, cold beer, no real menu beyond that.

The north side of Guanaja gets fewer boats than the south, so diving and snorkeling right off the property mean almost nobody else around. Check Instagram for the seasonal desserts and specials, they don't advertise those anywhere else.

• Sits on the top level of Island House with sea views on three sides, ask for the hammock corner.

  Fried grouper sandwich was fantastic and the beer was very cold. We did some free diving in the morning and stopped here for lunch.
