Chef Orng's tasting menu, 24 floors above Yangon
Mahi mahi from the Irrawaddy sits next to French-style quail, with gooseberries and cassava worked into dishes that would otherwise read as classically European. Chef Orng Joitamoi landed this tasting menu on the 24th floor of M Tower after a run as a pop-up at the Boundary Hotel.
Thirty seats behind an open kitchen, floor-to-ceiling windows over the city, and a bread course of sourdough, rye, pretzels and brioche made in house. Booking only.

I had a wonderful time celebrating my birthday at Echo this year. The food was delicious, and I loved how they incorporated local ingredients into each dish. The wine pairing was excellent as well—thanks to the staff for the great recommendation. Echo is truly one of the best fine-dining spots in Yangon. The restaurant offers a beautiful view of the city, and the staff were incredibly warm and attentive. They even surprised me with a birthday cake, which made the celebration especially memorable. I highly recommend this place and will definitely be back. 🥰

To attempt to capture our recent culinary experience in words feels, at best, ambitious and, at worst, a gentle injustice to the splendour that unfolded before us. What occurred over the course of the evening rose far beyond the familiar boundaries of dining and entered the realm of artistry. It became a gastronomic narrative that revealed itself gradually, crafted with the precision of a master composer and the contemplative soul of an artisan devoted to his craft. Every plate, every ingredient, and every fleeting aroma carried an air of quiet poetry, presented not merely to please but to provoke reflection, admiration, and profound appreciation. From the moment the first course arrived, it was evident that the philosophy of the kitchen rests upon a sincere reverence for authenticity. Ingredients were not assembled in a mechanical fashion. They were honoured. Each component had a clear purpose and seemed invited into the dish only after earning its rightful place within the wider harmony of flavours. The interplay between texture and taste demonstrated an extraordinary level of thought and discipline. It revealed a team determined to pursue excellence while refusing any temptation toward the ordinary. In their hands, simplicity became an elevated virtue rather than a concession. The presentation of each dish further illustrated the chef’s refined vision. One sensed with effortless clarity that every plate had been conceived as a canvas. The chef served as painter, sculptor, and storyteller all at once. Colours were balanced with discerning sensitivity. Garnishes were never placed for mere spectacle but instead were used to impart meaning or enhance the narrative of the dish. Each arrangement possessed an elegance born from restraint and intention. Even before tasting the food, the visual compositions alone had the capacity to satisfy a critic of the highest standards. Yet the true brilliance of these dishes could only be appreciated through the experience of taste. Every bite conveyed a sense of deep intention. The flavours emerged naturally, without exaggeration or theatricality. Nothing shouted for attention, yet everything held its own with quiet confidence. There was a philosophical restraint evident in the cooking style, a pursuit of purity that allowed the inherent qualities of the ingredients to speak with clarity. Rather than overwhelming the palate, the dishes guided it gently, revealing layers of character and craftsmanship with remarkable subtlety. As the courses progressed, it became clear that the chef and his team possess not only technical mastery but also a rare capacity for emotional expression. There was a sincerity underlying each creation, a sense that the dishes represented a reflection of the chef’s inner world. Passion was present in every detail, not as a forced sentiment but as a natural extension of the culinary identity he has cultivated. The care and the devotion poured into each course created a feeling of intimacy, as though we had been invited to witness the unfolding of an artistic autobiography. The service, too, contributed to the coherence of the evening. It was attentive without intrusion, elegant without pretence, and timed with a rhythm that complemented the progression of the meal. Every gesture seemed guided by an intuitive understanding of hospitality as both an art and a discipline. In the end, what we experienced was not simply a dinner. It was an artistic performance shaped by authenticity, originality, and genuine passion. The team’s commitment to excellence radiated through every course and left us with a memory that will remain vivid long after the flavours have faded. It was a celebration of culinary identity at its most refined, a triumph of creativity and craftsmanship that deserves the highest commendation.
