Single-vineyard dry Tokaji, poured in an 1790 cellar

Demeter Zoltán helped put dry Tokaji on the map, working tiny single-vineyard parcels that draw drinkers well past Hungary's borders. The tasting room sits in the cellar of a listed 1790 house on Vasvári Pál utca, right in Tokaj's old town.

Visits run by appointment only, with a set walk through five wines at 3pm, and the owners often pour themselves. Book ahead: this is a serious cellar, not a bar you wander into.
