Birba

A wine-first bar with Italian-style tapas, on the site of a former salumeria
Birba opened on Via San Mamolo in November 2025, run by Francesco Trady and Marco Ferrari on the site of the former Sabo Salumeria Bologna. The pair gutted the old fresh-meat counter to make room for tables, adding heated outdoor seating to extend the space beyond what the salumeria's footprint allowed.
Wine sits at the center of the concept, backed by an informal, tapas-style kitchen built around shared plates and gourmet toasts rather than a full trattoria menu. It runs as an all-day neighborhood bar, contemporary and intimate rather than styled after any single regional tradition, in a part of Bologna, near Porta San Mamolo, with a strong existing residential base.

Birba Bar was one of my favorite spots in Bologna. It reminded me of some of the best neighborhood wine bars I’ve been to in Paris, relaxed, welcoming, and focused on great food and wine. Francesco, one of the co-owners, was incredibly friendly and knowledgeable, introducing us to an excellent local producer we probably never would have discovered on our own. The food was delicious, the wine list was thoughtfully curated, and the whole place had a warm, easygoing atmosphere. Can’t wait to come back the next time I’m in Bologna.

Absolutely loved this spot! Francesco gave us fantastic wine recommendations and guided us to a delicious local bottle that felt both classic to the region but really interesting. The food was just as good - the toasties and the tartare were incredible. The whole experience reminded us of the cozy, snack-focused wine bars we love in Paris. We’ll definitely be back!

Excellent experience. I've been there for dinner 4-5 times already, and it's always a pleasure to return. I highly recommend it.

Really enjoyed our short time here. Wish we'd booked as the food looked amazing and the host made us feel so welcome. We stopped in for a cheeky bottle and great steak tartare. We'll make sure we book next time to fully relax and enjoy all they have to offer. Thanks for squeezing us in as a walk-in.
