Grab a seat before the sun drops. Seed Rooftop sits on top of the Hyatt Regency Malta, with St Julian's and St George's Bay spread out below and Mediterranean small plates built for sharing. By day it's a relaxed lounge; once the light fades, it switches into cocktail mode.
It's one of several hotel rooftops that opened around the bay in the same stretch, as local hotels turn top floors into destinations open to anyone, not just guests.

We’re staying at the hotel so we decided to go and eat on the rooftop. It worked out very nicely. They had a DJ a little loud, but it was a pretty evening a little hot, but it certainly was nice sitting up with the rooftop. The food was good. They had a sushi night. had a burger and sea bass tacos the waiter.monchocine was excellent. It made the evening much more pleasant having someone so nice and efficient the menu is limited upstairs, but I’m sure you can find something
