Vancouver Magazine's best new restaurant, quietly ingredient led

ELEM took gold for best new restaurant at Vancouver Magazine's 2026 awards, and the cooking explains why. It is ingredient led and quiet about it, the kind of layering you notice on the second bite rather than the first.

The room splits into three areas with different moods, so where you sit changes the evening. Ask for the back table if you actually want to hear the person across from you.

đŸ˜‹đŸ˜ŠđŸ‘Œâ€ïž Super impressed. We came here for a birthday dinner and we had a stellar time. Shawn was a fantastic waiter and the other servers were also attentive and informative. We had the $95 let us cook for you and it was delicious. Loved the Bone Marrow Elk Tartare and the Crab toast. The lab skewers were also tender and yummy. As was the popcorn dessert. We haven't had a great meal like this in a long time. One of our new favourite places. 👍 👍

ELEM was a surprising delight from start to finish. I’ve been to a good number of fine dining spots in Vancouver, and to be honest wasn’t expecting much. But I was blown away. It was a beautiful mix of the chef’s culture and modern dining. I didn’t feel like I was eating “yet another fancy steak” or a flavor that felt repetitive. Our entire table could not believe how good each dish was as it came out - the elk marrow and lamb skewers were our favorites by far. The taste and texture were well thought out, and I can’t help but see all the time and technique that went into this. The one dish that fell short (and honestly was good on its own, but compared to everything else just didn’t shine as much) was the chicken with wild asparagus. The mocktails and dessert were also a delight! Everything worked together, and we were stuffed by the end of it all. Finally, I’m not one to care too much about atmosphere or service (some of the best places to eat in the city don’t care much about it either), but this place was gorgeous. I felt comfortable, yet the space was so elevated I couldn’t help but look around and enjoy the vibes.

One of the most exciting dining experiences in Vancouver right now. The menu feels globally inspired without losing focus, blending bold flavours, refined technique, and high quality local ingredients in a way that feels both creative and intentional. Every dish was beautifully presented and thoughtfully balanced, with unexpected flavour combinations that actually worked rather than feeling gimmicky. The tasting menu was particularly impressive, offering a journey through different culinary influences while maintaining a cohesive identity. The cocktails were fun but weren’t memorable. The space itself is sleek, modern, and sophisticated, creating the perfect atmosphere for a special occasion, date night, or simply an exceptional meal. What truly elevated the experience, however, was the service warm, knowledgeable, and attentive without ever feeling intrusive. Vancouver has no shortage of great restaurants, but ELEM manages to stand out by delivering both innovation and genuine hospitality. A restaurant that feels worthy of the attention it’s receiving and one I’ll gladly return to.

We chose the "Let us cook for you" experience at Elem for our anniversary dinner and WOW the entire experience was absolutely wonderful. The service was friendly and attentive. Aure and Shawn was a delight to chat with and greatly helped with the seamless transitions. They along with Vish (amazing chef) explained the dishes in great detail and offered insight on how certain dishes were created and the philosophy behind it. Everything was really well made and tasted amazing. I would definitely recommend family and friends to come enjoy the experience. If I'm really picky, I'll say I would enjoy the wagyu more if it was aged longer so there is a more intense nutty and umami flavour. I also felt that the glaze/sauce on the lamb skewer was overpowering the lamb's own flavour a bit. I look forward to my next visit to see what new dishes Vish has come up with and also satisfy my craving on the favourites.

We had such a great first visit to Elem! Mark was an amazing server—super friendly, patient, and really helpful explaining the menu (always with a smile 😊). The space is beautiful, modern, and polished, and the menu has a fun variety of flavours to explore. Every dish looked like a work of art. We left very happy and can’t wait to come back again!
