David Thompson's Thai kitchen, up from Goa

Rohit Khattar brought Fireback from Goa to Lower Parel with David Thompson as culinary director. Thompson has spent four decades cooking Thai food, and it shows in the detail: a tom kha delicate enough to drink by the mugful, som tam made with pineapple instead of raw papaya, miang kham heaped so high it needs two bites.

The green curry isn't especially green, and that's deliberate. Fried pork belly gets tucked into charred cabbage leaves, sweet potato skewers arrive under thick gorlae barbecue sauce with bright pickled cucumber alongside. Cocktails go tropical without going tiki, including a clear drink where the coconut comes through as smell more than taste. Four zero-proof options are worth ordering on their own.
