The plates arrive built for the table, not for one person working through three courses alone. That's the whole idea at Bistro Bar Louis, where French technique meets a looser, modern menu. Bart Mulder, who already runs Bistro Boys and Bar Barrie in town, brought in cook Dani Bakker for the corner spot Louis XV left empty on Oude Kijk in 't Jatstraat.

They kept Louis's name for the new place. It sits right where the university crowd spills into the shopping centre, so the room fills fast from late afternoon on.
