Cocktail lab and Latin American cocina

A cocktail lab makes its own liqueurs, fermented sodas, vinegars and extracts at Lima. That feeds a bar menu alongside Latin American dishes cooked over a Big Green Egg: ceviche, octopus, sharing plates. Gies Neienhuijsen runs it inside a former bank building on the Mariënburg.

A DJ booth sits in the middle of the room, and the calendar fills with salsa nights and mariachi performances. Neienhuijsen's idea: hospitality now means creating a moment, not serving a product. Opened spring 2026.
