Jaïs Ibiza opened for the 2026 season on 4 June, chef Jaïs Mimoun's first restaurant outside France, set inside a preserved Spanish-style finca on the road to Sant Josep. The menu pairs Parisian technique with Mimoun's Moroccan heritage and Mediterranean seasonal produce.

It runs seven nights a week through the end of September, closing with the season rather than staying open year round.
