Nazario Cano's stews and rice, pushed to the grill's edge

Nazario Cano earned his Michelin star in Murcia. Árdia marks his return to Madrid twenty five years after he first made a name here, on the Callejón de Puigcerdà. The name comes from the Latin ardēre, to burn.

Stews, rice dishes and spoon food get pushed right to the edge of the grill. It's a finishing move, not a stovetop one.

Fai was AMAZING!! He suggested the best food options for us. He made sure that the food was to our liking and even had great conversation. I would definitely go back. If you visit request for Fai to serve you. We also found out that he speaks 5/6 languages! He was the best!

Top of the Top 🔝 ❤️🔥 Madrid has no shortage of excellent restaurants, which is exactly why it takes something special to stand out. Ardia is one of those rare places that manages to combine creativity, elegance, and flawless execution into a dining experience that feels genuinely memorable. From the moment you enter, there is a sense of quiet confidence. The space is beautifully designed—warm, refined, and intimate without feeling overly formal. Every detail, from the lighting to the table settings, contributes to an atmosphere that immediately signals you’re in for something special. The cuisine is exceptional. Each dish arrives looking like a work of art, but what impressed me most was that the flavors more than lived up to the presentation. The menu demonstrates remarkable technical skill while remaining approachable and deeply satisfying. It’s the type of food that sparks conversation at the table and stays in your memory long after the meal is over. Service was equally impressive: polished, knowledgeable, and attentive without ever feeling intrusive. The staff have mastered the art of anticipating what guests need while allowing the evening to unfold naturally. In a city filled with outstanding dining options, Ardia succeeds in creating something that feels both contemporary and timeless. It delivers the sophistication of a destination restaurant while maintaining a warmth that makes you want to return. Without question, one of the most impressive dining experiences I’ve had in Madrid.

Hands down one of the best restaurants in Madrid. Incredible food & exceptional service. The ground floor patio is a total vibe and so is the terrace. The DJ was very good and the cocktails were a total highlight ! Must have - fiedeau, shrimp carpaccio with fried egg, blue fin tuna vitelo and especially their Piparan spritz !

Had a fantastic dinner here - Fai gave us brilliant recommendations for starters and mains. Really visually impressive dishes that tasted even better! I will be coming back next time I am in Madrid!
