Teppanyaki from two chefs who trained at Enigma

Two young chefs run the iron plancha at Tetsu. Brazilian-born João Kather and Madrid native Miguel de Aguilar trained together at the city's Mom Culinary Institute. Both then cooked through Enigma, Boragó and El Celler de Can Roca before opening on their own.

The format is teppanyaki, rare for Madrid. Dishes leave the hot plate and land on your table seconds later, still cooking at the edges.

Extremely good restaurant in Madrid combing Spanish flavors with Japanese and Brazilians ones. Dishes were very well executed and the omakase Menu really walk you through thei cuisine. The restaurant is owned by to super young chefs that really master the teppaniaky not for the show but just elevate their dishes. Must do when in Madrid!!

This is an excellent restaurant which actually deserves to have a star and soon will do I am sure. The fusion is really well judged and you taste the separate ingredients: it isn’t some crap mash up of ingredients. The portions are perfect - you leave full but comfortable. Has an interesting drinks selection and the place feels spacious and relaxing.- decent value for money considering the quality and ingredients used.

Tetsu is one of those restaurants that feels exciting from the second you sit down. The whole project is driven by two absurdly young chefs, Miguel de Aguilar and João Kather, and that youth is all over the menu in the best possible way: restless, daring, ambitious, and completely unafraid. Tetsu’s concept revolves around a bar-style experience with the griddle at the center, and both Michelin and local food coverage have highlighted how unusually young the chefs are for a restaurant already getting this level of attention. What I loved is that the menu doesn’t feel cautious. It feels like two young chefs decided not to wait for permission. Maybe they are still a little too young to build a menu entirely from scratch with total maturity and restraint — but honestly, that is also the beauty of it. There is zero fear here. Just courage, ideas, and a real hunger to innovate. Sometimes that kind of confidence can be rough around the edges, but at Tetsu, it mostly reads as energy, personality, and belief.

Lunch, tasting menu. 8 dishes plus 2 desserts. 9 out of 10 were incredibly tasty and interesting, the tenth was very unique but less to my taste. Worth a special mention are the tartar, niscalos, wagyu with yuzu kosho, and the mushroom dessert with caviar. Exquite experience. Dishes were all special, varied, prepared in front of us and very enjoyable. Great value for money. We'll be back for sure.

Incredible experience. Food is outstanding, not a lot of quantity as it is accustomed in these places and a bit pricey, but lovely and delicious nevertheless. If you're looking for good ambience and vibrant energy, Tetsu is the place for you.
