A Quique Dacosta protégé's Mediterranean grill, imported from Valencia
Ember is the whole point here. Chef Ricard "Capo" Tobella, who trained under Quique Dacosta, runs the grill with a polish you'd expect from a decades-old institution, not a newcomer.
Restaurateur José Tomás Arribas brought the concept over from Valencia, landing in Salamanca in October 2025. The menu sticks to Mediterranean classics cooked over live coals, nothing fussy about the plating.

The food was absolutely delicious. I recommend the sepia and wagyu entrecot. Don't miss out on dessert all options are incredible. Service was amazing our server was so attentive. I loved this place !

Crazy good quality of food! A new truly hidden Gem in city center of Madrid. Precise attention to details all hands down to the Masterchef of Qorte! Thiago our waiter was responsive and made the full experience even better! I will not miss out on Qorte next time I’m in the city that is for sure!

This is a great restaurant serving the food from Valencia. The restaurant is new and beautiful. The paella was excellent. The portion was generous. Definitely this is one of the best paella restaurants in Madrid.
