Ayantar: clear, professional exterior restaurant shot

Ayantar

★ 4.8 · 206 reviews Madrid Opened August 2024

Four young chefs, a Michelin nod within months

Four young chefs, all with time in well-known kitchens behind them, opened Ayantar in the Vallehermoso corner of Chamberí. The menu favors product respect and technique you can actually recognize over spectacle.

The Michelin Guide noticed fast: a recommendation landed just eight months after opening, in May 2025.

My experience at Ayantar restaurant in Madrid is always excellent. The service from the entire team is impeccable, and especially from Ana, the owner, whose kindness and warmth make you feel right at home. The food is spectacular, with high-quality ingredients, and the brilliant idea of offering almost the entire menu in full or half portions is perfect for trying different dishes. Without a doubt, it has become my favorite restaurant in Madrid, not only for its excellent value for money, but also for the wonderful personal service that makes me always want to return!

A very pleasant surprise. What a great combination of delicious ravioli and excellent meat or fish. The service was superb. I'll be back.

Exceptional, highly recommended. The place is very pleasant and elegant. We went on a Sunday for a family lunch and were delighted. Traditional food, simple yet very well prepared and of good quality. The game and offal dishes were outstanding; my grandparents were licking their fingers. They also have children's menus. One of our guests was vegetarian and had seven or eight dishes to choose from, and another guest was celiac and could eat practically everything without any problems; they were very attentive. The service was wonderful, friendly yet personal, and Ana, the sommelier, has an incredible wine cellar with exceptional value. We will definitely be back.

We went to this place because of the chef, whom we know from his work at La Paloma restaurant. The restaurant itself isn't very welcoming; the decor leaves much to be desired, and the tables are piled high with napkins and other items right next to where you eat. As for the food, we started with some seasonal asparagus, which was very well cooked and flavorful. Next, we had verdina beans, which were delicious and full of flavor. Then we had tuna tataki, which was tasty but needed a bit more sauce. After that, we tried the aged beef tataki, a very good cut of meat, but I also thought it would have benefited from more sauce. Finally, we finished with suckling pig with potatoes. It was truly delicious, with perfectly crispy skin, and served with fries. I appreciate that you can order half portions of almost everything on the menu, as this gives you the option to try more dishes. As for the service, I'd say it was adequate, nothing special.

An incredible experience, both for the food and the warm service and the great professionalism of the entire team. We asked them to help us pair the wines with the food, and it was the best choice: each wine surpassed the last.
