Natural wines poured by Belgium's 2023 sommelier of the year

Anthocyane opened on Rue des Fossés Fleuris on April 1, 2025, a wine bar and bottle shop from Maxime Sanzot (named Belgium's best sommelier in 2023) and his partner Louise Zordanello. The list runs almost entirely on ethical, biodynamic wines from independent European producers, about 150 references to drink in or take home, alongside charcuterie and cheese.

It opened next to Bistro Camélia, the bistro Louise and Maxime run across the street after closing their previous restaurant, Racines, in Floreffe. The two addresses were built as a pair.
