The burger anchor of San Pedro de la Paz's new strip

Santiago chef Rolando Ortega built Rabbo around burgers and Latin American plates instead of a fine-dining pitch, and it shows in the room: easy, continuous service that runs from afternoon into night. This is a neighborhood spot on Los Canelos, not a special-occasion one.

It anchors a dining strip that's grown up in San Pedro de la Paz over the past couple of years. Ortega later used the momentum here to open a second, more experimental project, Carnaval, inside the 1260 food hall in downtown Concepción.
