Barrel-poured cocktails in a scrappy Santiago success story

El Sindicato poured its first drinks out of a delivery van during the pandemic, hopped between pop-ups and borrowed rooms, and finally landed its own bar in Jardín Mallinkrodt in 2025. Camilo Solano, Paula Troncoso and Valentín Fuentes run the U-shaped room, plants against industrial fittings.

Cocktails come straight from the barrel. Order the Clear Paina-Colada, the rebuilt Bendito Daiquiri, or El Santo, tequila macerated with nachos and a chipotle cordial.
