Cuba's best-known vegan table, run from a chef's own home.

Chef Arístides Smith rebuilt Baracoando after Hurricane Matthew flattened his home near the waterfront, and has run an all-vegetable buffet from it since. Ten to fifteen plant-based dishes come out nightly, still unusual in Cuba. He works the room himself most evenings.

Smith won a Premios Excelencias Cuba award in 2024 for his vegetable-forward cooking. Travel writers who reach Baracoa call it one of the country's more memorable meals, not just the city's.
