You don't need a room key to eat here. NINA runs on the European Plan, so dinner gets billed on its own, and anyone can book the Chilean chef Diego Muñoz's tasting menu through OpenTable like any standalone restaurant in town.

The opening made headlines beyond hotel trade press, partly because this was St. Regis's first property in the Dominican Republic. The tasting format hasn't changed since day one, though the dishes shift with the seasons.
