Ask a local where to eat and Tiesto's comes up before anything else. Half of that is the food, half is the show: the tiestos, the clay dishes it's named for, come out in a procession that turns the table into a bit of theater.

It shows up in the Summum Ecuador rankings year after year, and the dining room is small. Book ahead, everyone visiting Cuenca has already been told to come here.
