LaMaría
Cuenca Opened Opening date unknown
Two brothers, two wives, zero kitchen rules
Ronald and Manolo Morocho cook at LaMaría while their wives, María Verónica Herrera and Mary Urgilés, run the room and the bar. The four of them built the place around one idea: no house style, just whatever works.
So a locro de papas comes topped with octopus, pimentón de la vera and olive oil, next to morocho empanadas stuffed with cuy and a soup called ramenestrón. The room nods to the Chola Cuencana throughout.
