Cypsèle: clear, professional interior shot

Cypsèle

★ 4.7 · 83 reviews Paris Opened 27 November 2025

A tasting menu that changes daily, built on wood smoke and foraging

Wood smoke, foraged ingredients and unexpected technique drive the tasting menu here, not a fixed seasonal repertoire. It changes daily under Polish-born chef Marcin Król, whose résumé runs through Noma, Le Chateaubriand and Maison.

Lunch runs 85 euros and dinner 145, limited to Wednesday through Saturday. The small scale keeps the kitchen tight rather than chasing volume. Sommelier Quentin Loisel, formerly of Le Jules Verne, built the wine list to match.

This place is very special , from the dining room to the service to the food. All the way through it is superb. I imagine a very bright future for Cypsèle.

About 18 months ago, I met a guy in Delicatessen (an excellent wine bar in Paris) who said he was going to be opening a restaurant. I finally ended up going there for a solo lunch. Paris was just hitting the next phase of the heatwave and Cypsèle’s beautiful dining room was mercifully cool. The food also reflected the weather and the season, not sitting heavily in anyway but still having stunningly punchy flavours. Alongside the food, the sommelier recommended some excellent wine to accompany my meal. The space is beautifully designed and features an incredibly luxurious loo as well. Very comfortable seating as well. I loved it and can’t wait to go back.

We visited for lunch in the midst of the Paris heatwave. Menu changes daily which (I think) is so exciting, and invites one to return often. Interesting room, calm ambience, and the three members of the waitstaff we interacted with were all lovely, especially the head of house who made a beautiful champagne recommendation…he really listened to us and was also fun to chat with. We enjoyed each course, very clean plating and the ingredients shone. The pacing was perfect. We look forward to returning the next time we are in town.

A rare gem that opened 6 months ago and is still fairly priced for this level of culinary experience in Paris. Cypsele is a slick gastronomic restaurant with a fixed menu that evolves daily. The chef's skills are best visible on the seafood dishes. We are already looking forward to come back in the next months.

visited this newly opened gem yesterday with a few friends for a birthday celebration. the service was great but the menu, had some shortcomings for my taste. i got the charred pork as a replacement for the seabass since i do not eat seafood - the meat was unfortunately overcooked to what was close to a well-done. my friends and i were also wondering about what the thought behind the main dish was, since the lamb barely had any edible pieces to eat from (a lot of tendons, even for a ”fat” lover like myself) and the rest of the dish felt a bit random. there might have been some thought by the head chef, but this is just my opinion. the best dish by far was the toasted chip with cured pork on the second last photo, that was extremely good. the pigeon was also great! beautiful space.
