A bistro-bar pouring "solar" cocktails next to sharing plates and vinyl sets
Pompette opened on rue Gabriel Péri on May 14, 2025, the work of two friends, Corentin and Léo, who didn't see why a bistro and a cocktail bar had to be separate things. Cocktails run 10 to 12 euros, homemade and built on pairings that sometimes sound odd on paper, next to colorful seasonal plates priced 7 to 13 euros, made for sharing.
The soundtrack moves from Latin to groove, hip-hop to house, and one of the owners sometimes steps behind the decks to spin vinyl between rounds. That refusal to cut corners, on drinks and food alike, made Pompette one of the names people kept mentioning in Toulouse's bar scene in 2025.

We were at the bar and had drinks and nachos and they were amazing. The waiter was really sweet and kept checking on customers.

We stumbled upon this bar on our first night in Toulouse after a long day of travel. The energy and vibe is amazing- so friendly and welcoming, which was so special for us travelling from Australia. Food was fresh, creative and delicious! Highly recommend!! An absolute gem.
