Five-course omakase in a pink-tiled basement

Kevin Bürmann and Jule-Fee Poll spent six years side by side at Haebel, where Bürmann earned a Michelin star, before building their own semi-basement room around a pink-tiled cooking counter in the Schanzenhöfe courtyard, the same one that holds Tim Mälzer's Bullerei.

The format is a five-course omakase with no à la carte option, built around one seating a night. Serious technique, none of the formality that usually comes with a star chef's name on the door.

We had a wonderful evening at JFK. 🤩 The food was fantastic, different, surprising – and the accompanying drinks were delicious and so much more than just a simple wine pairing. I haven't enjoyed myself so much, laughed so much, and experienced such a wonderful atmosphere in a long time. 🥰

First off: Two wonderful people work here, passionately pursuing their profession with incredible talent. And also: My evening at jfk was great. But not outstanding. Perhaps the drinks pairing was a definite 10/10. The food was fantastic at times (grilled peas, preserved lemon & ayran; Hawaiian toast), but also occasionally not perfectly balanced (chicken neck sausage; mapo tofu). Overall, however, I find the concept very refreshing. The proximity to the kitchen and the hosts makes for a very enjoyable evening.

Unfortunately, the price-performance ratio didn't match the overall experience. The dishes were technically well-prepared and tasted solid, but nothing truly special or memorable remained. The combinations seemed rather safe and lacked creativity, excitement, and surprise. Overall, it was a pleasant evening, but it didn't quite justify the prices and left no lasting impression.

Great food, nice wine pairings, good service. Unpretentious and authentic. Only drawback: rather loud music from the next room (main restaurant Bullerei).
