Thomas Matsas' 16-seat counter in Syntagma, viral within a night
Chef Thomas Matsas, working with the team behind Striggla, opened Thirio on a small corner of Navarchou Nikodimou Street in Syntagma on December 29, 2025, with just sixteen seats built around an open kitchen. It's a small enough room that the whole point of the concept is watching the cooking happen a few feet away rather than reading about it on a menu.
The restaurant became a fixture of Athens food conversation within its first night open, which for a sixteen-seat room means booking ahead is close to mandatory. The menu leans on Greek ingredients handled with more technique than a typical taverna, without losing the taverna's directness.

Found this place while visiting Athens. Alex was a very gracious host and the food was truly delicious. We sat at the Chef’s table and were able to see it prepared and get explanations on each dish. The Blue Crab and Collard green dishes were my personal favorites. Being from the American South, these 2 ingredients were very familiar and the bar is high. The crab was really fresh and delectable paired with a yummy pasta. For me the Collard greens dish, for me, was very unique. Super smokey with a lemony flavor. Large portions and served family style which was perfect for sharing with the group. Very reasonably priced. Five stars.

Thirio, which is Greek for “beast,” is a must if you’re looking for a restaurant that explores the daring side of Greek cuisine. The menu is small, seasonal, and inspired by traditional Greek dishes, but executed from a different perspective, fusing elements and techniques from other cuisines. All the dishes we tried were unique and well cooked, with only minor flaws here and there that didn’t take away from the experience. We were lucky to be seated at the bar, with a full view of the kitchen, which was immaculate and ran like clockwork. The chef and his team were eager to offer suggestions from the menu, share details about the dishes, and talk about the restaurant. One thing we learned is that they are soon going to expand the already cozy and tastefully understated dining hall. Good news, I guess: the beast is growing. And given the splendid experience, deservedly so.
