Palermo's first all-vermouth bar, spinning vinyl in Kalsa
Vermuteria opened in Piazza Cattolica on May 14, 2025, the first Palermo venue built entirely around vermouth, the herb-and-spice wine that dates back to 18th-century Turin. Three partners who already run two other spots in the city, Giuseppe Costanza, Gioele Errera and Giorgio Naselli, wanted to treat vermouth as a category worth exploring rather than a single pour on a shelf.
The bar runs as a listening room too, one of the first in Palermo to build vinyl into its everyday format instead of saving it for special nights. Food runs alongside the vermouth list, so it works from aperitivo hour through late night in the Kalsa district.

Really cool place and lovely to see something a little different opening in Palermo. The vermouth selection is so vast and you could spend hours working through it! The cocktail menu is also very interesting, many of them including a different vermouth, so you’d need to be a vermouth fan I’d say. This little area has lots of bars to choose from, but I’d definitely give this one a go!
