Omakase finally lands in León

León didn't have a proper omakase counter until this one. It's the León outpost of San Luis Potosí's Umikumo, running the same trust-the-chef sequence of nigiri and seafood instead of an à la carte sushi menu.

Sourcing drives the whole thing, and the chef sets the pace of each course. It's one of León's more premium openings this year, on Boulevard Juan Alonso de Torres.
