Pistilo opened on Chiapas Street in Roma Norte in 2026, a mezcal bar that treats the spirit's regional variation, Oaxaca, Guerrero, Michoacan, as the point of the menu rather than a footnote to a cocktail list. Contemporary art fills the walls, and small interactive elements built into the space give it a different register than the usual dark, wood-heavy mezcaleria.
Staff walk guests through the differences between agave varieties and regions on request, treating the bar as much as a tasting room as a nightlife stop.

We just got drinks here but they were great. We went during a slow time so it was very mellow but the atmosphere was still fun - great music, kind staff, I could see it being lively during peak hours. Popcorn was a fun touch.
