Varde opened on Cordoba Street in Roma Norte in February 2026, set inside a historic porfiriana house with a DJ booth built into the dining room. Chef Alexis Ayala runs a small-plates menu that jumps between references, Korean barbecue wings sit next to kampachi crudo, built around contemporary technique rather than a single cuisine.

Varde is a beautiful place! The decor is stunning and the music is fantastic—it's at a moderate volume so you can easily have a conversation. The atmosphere is lovely, and the service is incredibly friendly and fast. The fries are delicious, and the drinks are great!

We loved the concept and everything in general! The food is delicious and original (the wings are a must-try) and the service is friendly and attentive. The cocktails are amazing; we had a guest bartender on Tuesday, and he had his list of drinks for $100 (all delicious). The space is really cool with a vinyl DJ and several seating areas, in a beautiful and spacious old house, with great taste in decor and lighting. They're opening the rooftop terrace soon. We'll definitely be back!
