Franz opened on Anatole France Street in Polanco in 2026, a cocktail bar built around classic drinks made well rather than trying to reinvent the format, with the room's architecture centered on a tree growing up through the middle of the space. The design does more of the talking than an inventive drinks list would.

It leans toward a dance-friendly, later crowd than Polanco's typically more formal restaurant scene, closer to what's more common in Roma or Condesa.
