Ibn Battuta's routes, put on a menu by Salim Aït Ezzine
The Ritz-Carlton Rabat opened Rihla on 4 June 2025, tracing the journeys of Ibn Battuta and the old Silk Road. Chef Salim Aït Ezzine takes the menu from North Africa through Andalusia to the Levant and further east.
The signature dish is a ras el hanout lamb shoulder, but the more interesting plates sit further down the menu: lamb biryani, sea bream massala with coconut and turmeric. Look up at the dome, worked in Oriental lacework.

The service was amazing, I have nothing to say. The hostess (Najat) was very kind and welcoming to me, as was the supervisor, who was wonderful. The waiter Houssam was a 10/10, and even the bartender Nabil provided excellent service. The musicians also sang beautifully. I really want to thank the entire team from A to Z and I recommend it 10000%! ❤️❤️

I’ll write a well-crafted review based on the notes provided, using a warm and evocative tone with a 5-star implied rating. ⭐⭐⭐⭐⭐ — A Journey Worth Every Bite Rihla doesn’t just serve food — it tells a story. Named in honor of Ibn Battuta, the legendary 14th-century Arab explorer who traversed much of the known world, the restaurant takes you on a culinary journey from the spice-laden souks of Morocco, through the aromatic kitchens of Persia, all the way to the far reaches of Asia. This is not fusion — it’s something richer: a faithful, region-by-region celebration of culinary traditions that have endured for centuries. We started with a spread of starters that set the tone beautifully — bold, layered, and clearly made with care. The seafood pastilla was an absolute standout: flaky, fragrant, and utterly divine. The lamb chops were exceptional, and the couscous — generously loaded with lamb and merguez sausage — was the kind of dish that makes you slow down and pay attention. Every plate that arrived felt intentional, with flavors that were confident without being overwhelming, and presentation that was elegant without feeling precious. The service matched the food: warm, attentive, and perfectly paced — present when needed, unobtrusive when not. And the live music added a final, wonderful layer to the atmosphere, giving the evening a sense of occasion without feeling forced. Rihla is a rare find — a restaurant with a genuine soul. It feels both rooted in tradition and alive with creativity. Whether you’re a food lover, a culture enthusiast, or simply someone in search of a memorable evening, this is a table worth booking. Highly, highly recommended.

Rihla honors the legendary Arab explorer Ibn Battuta, the Marco Polo of the East, with a robust menu of dishes covering flavors from Moroccan, through Persian to Asia. It's not a fusion restaurant by any means, but a storytelling experience that brings forward authentic culinary traditions from each region along his travels, beautifully executed and full of heart. We had a variety of starters, lamb chops, and a fragrant couscous generously loaded with lamb chops and sausage. The seafood pastilla was divine. Every dish was excellent. The flavors were bold yet balanced, the presentation thoughtful, and the service warm and attentive without being intrusive. Rihla isn’t just a meal; it’s a journey through centuries of trade routes and spice trails, reimagined with elegance and depth. Highly recommended for anyone seeking a memorable dining experience that feels both rooted and refined. The live music performance made for an excellent ambiance.
