Sushi boutique on the Spekstraat where you pick piece by piece

NIWA opened on 7 July 2026 and works more like a patisserie counter than a sushi restaurant. Everything is made fresh through the day rather than in a morning batch, and you choose piece by piece from the display instead of ordering a fixed box, which means a vegetarian and a raw fish eater can build very different plates from the same counter.

It sits on the Spekstraat, one of the short lanes behind the Grote Markt, and keeps a cocktail list going alongside the food, so the room works for an evening rather than only a quick lunch. Haarlem has plenty of sushi already, and NIWA's argument is the picking rather than the price.

This is the best sushi place in the Netherlands. It has a cozy courtyard where you can relax while eating sushi.

I had a lovely to go surprise box from too good to go and i love the variety and the presentation! the worker gave me all four of the soy sauces to try with it labeled (so thoughtful) and i even had a visitor come smell the delicious food
