Michelin star upstairs, fries for five euros down here

Kombu takes the room under Beluga Loves You that used to be reserved for private dining, and turns it into the everyday version of the star kitchen above. Same chef, Servais Tielman, but a la carte: starters from twelve euros, mains from twenty-three, and a side of fries for five.

You walk in through Beluga's entrance and head down the stairs past the star restaurant. Tielman is growing the room slowly toward thirty to thirty-five covers rather than filling it fast. Open Wednesday through Saturday evenings.

    Our evening at Kombu was initially promising: the kitchen delivers perfectly prepared dishes, full of flavor, with generous portions and a refined Asian touch. The wine selection is well thought out and attractively priced, although a classic Riesling would not look out of place on the menu — especially if the Eastern trend continues. While the kitchen is convincing, the hospitality unfortunately falls short. All communication and the menu are exclusively in English; this shows contempt for your local customers, who are the ones you rely on—they return and provide the much-needed word-of-mouth advertising. Upon arrival, we were directed to a table by an English-speaking intern, after which we waited ten minutes without any explanation until the menu was placed on the table without any comment. Other guests, however, were warmly welcomed and immediately offered an aperitif. It was only after fifteen minutes that someone came to ask if we wanted to order something. Fortunately, the situation and this issue were handled excellently by manager Olivier, who, with professionalism and attentiveness, managed to save the evening after all. The terrace looks cold and unwelcoming, which is understandable for a newly opened establishment. However, a simple message upon arrival — for example, a small apology and an offered aperitif — would have made up for a lot and enhanced the hospitality. In short: a kitchen that shines, but an organization that still needs to grow. Warmth, structure, and attention are indispensable to make guests feel welcome. A restaurant should be a warm bath, not a cold shower.

    It is such a shame that we have to write this, but our experience was not very positive. The atmosphere is dark and warm and the terrace pleasant, but the service was very substandard. We started with two glasses of champagne and had to fill our own water glasses; it remained that way for the rest of the evening. Neither wine nor water was refilled even once. The knowledge of wines was nil. Our waitress indicated that she does not drink wine and went to get someone knowledgeable, but even this person had to admit, after asking just one question, that they had no wine knowledge... What a waste! When the food was brought, we did not receive a single explanation of the dishes. The dishes were tasty, as expected from Servais, but the vegetables were raw and the fries very floury. The biggest disappointment was the cheese platter... For the price of €25 p.p., it was extremely small. 5 small pieces of max 2cm and stale raisin bread that was dry. Not a nice ending to an already disappointing evening.

    Fantastic food and a wonderful ambiance. The tartare,tuna and ribeye were my favorite. My only feedback is that it is impossible to fathom how they focus on Japanese dishes but do not serve any sake :'( Definitely looking forward to my next visit.
