Piura's food, cooked five hours south in Trujillo
Seco de chavelo, majado de yuca, ceviche done the Piura way, not the La Libertad way. Origen brought a whole regional kitchen south and Trujillo didn't have it before.
Northern Peru's food changes more than people expect between departments. Two provinces cook the same fish almost opposite ways, and this is the one Trujillo was missing.
