Yusuke Hino came back to Manila and opened a counter

The nigiri arrives one piece at a time, and that only works if you're sitting right in front of him. Chef Yusuke Hino cooked in Manila for years, left, then came back in July 2026 with his own room on Arnaiz Avenue. Unagi and the grilled section are where he shows off.

Book the counter, not a table. The room sits on the ground floor of an office block in Legazpi Village and doesn't announce itself from the street. Omakase is the point, though there's an a la carte list if you'd rather order for yourself.
