Skip the dry-aged size flex. Chef Wade Watson runs Bronte on an Australian steakhouse logic, not an American one, so the focus sits on the cut and the fire rather than how long the beef sat in a locker. The classics around it are done straight.

Jupiter Street has turned into a corridor of new openings and the Levanto Building holds several of them, worth a look on one trip. Watson is Australian, the beef isn't all imported, and it's worth asking how the local cuts differ from the Wagyu before you order.
