3 Cores Roastery roasts its own beans and builds its short menu around them, the kind of coffee-first operation that has multiplied across central Ankara over the last few years. Espresso and filter are the focus, with the roastery side giving it a claim to freshness the chains can't match.

It sits on the Maltepe edge of the Kızılay downtown, handy for a considered cup away from the busiest café strips. Good for filter and a bag of beans to take home.
