Absolem opened in central Bordeaux in August 2024 with a format the city hadn't seen before: cocktails poured straight from taps instead of shaken or stirred to order, served on tasting platters built for sharing across the table. The kitchen smokes its own food, house-made croquetas, smoked burgers and marinated chicken, plus vegetarian options.
Retro arcade games, darts and an interactive jukebox fill out the room. Open Tuesday to Saturday, until 2am Thursday through Saturday, it built a following fast and became one of the more recommended new bars in the city center.

Having come for a special evening this Saturday, I highly recommend this place!! The atmosphere, the amazing experience, and the exceptional taste were all fantastic! And all this in a superb establishment. The staff is cheerful, smiling, and very welcoming. They offer helpful advice and are quick in taking orders for both food and cocktails. Finally, a bar where the cocktails aren't served in a thimble with nothing to drink! Plus, the quality is truly exceptional. You can tell the team is passionate! Food-wise: bursting with flavor! A fantastic discovery! 🍸 Absolem offers a great selection of cocktails on tap, original and perfectly crafted. The team is welcoming, friendly, and passionate, all in a warm and inviting atmosphere where you feel right at home as soon as you walk in. But the real highlight is the food 🤯: an absolutely incredible vegetarian burger with shredded and smoked oyster mushrooms—probably one of the best burgers I've had in a long time, in any category. A place you absolutely shouldn't miss if you love great cocktails, great food, and great vibes. 👌🔥
