Lyon's first vegan tasting menu, treated like haute cuisine
Emily Dader treats vegetables the way a meat kitchen treats protein: fermented, smoked, or salt-cured. Trèfle is her first restaurant and, by most accounts, Lyon's first fully vegan fine-dining address.
She grew up near Grenoble, the granddaughter of farmers. Dishes build from herbs, flowers, algae, mushrooms and grains, not substitutes for meat. Lunch is four courses for 34 euros, dinner seven for 68, served Tuesday through Saturday. It's tasting-menu seriousness applied to vegetables, in a city built on meat-heavy bouchons.

This meal was better than some of the Michelin starred restaurants I've eaten at. From start to finish, each course was exquisite, perfectly balanced and prepared, creative, and visually appealing. The rhythm of the courses was perfect (not too slow or fast), the service very friendly, and overall just a joy to experience. It is worth every cent for such high quality food. If you only have one chance to eat at a fancy restaurant in Lyon, make it this one!

Brilliant. A lovely space. Passionate and easy going staff. Astounding food. Went for lunch and I thought it was good value based on the quality of what we ate.

Delicious, clever, fun vegan cooking and perfect wine pairings served with enthusiasm and knowledge. If you worry that plant based food lacks in flavour or character you should come here, it’s magnificent.

Chapeau to the lovely Trèfle team. Thank you for this experience! I love meat, fish, cheese and so on. I didn’t miss any of it. Quite the opposite, in fact. I believe that when you leave out the aforesaid, a whole world of variety opens up. We were delighted by every Lucullan creation. Each course presented a variety of harmoniously balanced flavours. I couldn’t pick a favourite course. It was lovely to watch the contented and calm activity in the open kitchen. Thank you for this sublime journey.

A wonderful place for Vegan Food with exquiste kitchen and service, good wine too. We loved their champagne.
