Prosper
Marseille Opened 8 January 2025
A bistro-trattoria hybrid on Cours Julien, from an ex-Frenchie chef and a Franco-Argentine sommelier
Prosper opened on January 8, 2025 near Cours Julien, splitting the difference between a French bistro and an Italian trattoria. François Roche, former executive chef at the Frenchie restaurants in Paris and London, runs the kitchen alongside Santiago Michel, a Franco-Argentine sommelier already known around Marseille's food scene. The menu changes with the seasons: soft tortilla with green harissa, pork tart with sauce gribiche, squid crudo with XO sauce, braised octopus arroz, fresh pasta, fried pizza with taleggio.
Service runs Monday to Friday evenings from 7:30pm, and reservations go through phone or WhatsApp rather than an online system. Pairing a Frenchie-trained chef's technique with an Italian-leaning menu and an Argentine take on wine gives La Plaine, already one of Marseille's densest dining strips, a genuinely cross-cultural new address.
