A wine bistro rebuilt around fermentation, off Gudiashvili Square

Natural wine is only half the story here. The kitchen leans on fermented and slow-cooked Georgian ingredients instead of a standard bistro menu, and the open kitchen puts the chef in full view of the tables. The room sits in a 19th-century building five minutes from Freedom Square.

It's one of the recent relaunches that turned this corner of Sololaki into one of the more watched stretches of the neighborhood in 2025, alongside CO:CO Coffee Collective a few doors down. Casual enough to work as just a bar, but there's a full kitchen behind it.
