Laura Binder opened Butter und Bohne on Bucher Straße on 25 February 2026. She bakes Nordic-leaning pastry: cardamom-orange buns, chocolate-coffee bakes, made from ingredients she sources herself.
The studio only bakes two days a week, and the small batches sell out fast. No counter, no all-day café, just pastry straight from the oven.

A really lovely café with charming decor. We loved the atmosphere; it definitely invites you to spend some quality time there. The pastries were also perfectly fine and tasted great. Overall, we had a wonderful visit and can easily imagine coming back sometime. We definitely enjoyed it! ☕️🤎

Picked up a couple of extraordinarily good Scandi style cinnamon buns here today (soft dough, balanced sweetness, overall better than plenty I have had up north) and chatted with the owner. They are only open a couple days a week but if you have time, make sure to go.

A wonderful atmosphere and by far the best Scandinavian pastries I've ever eaten! Even better than in Norway. And I really liked the grapefruit soda too. It's great that Nuremberg has places like this!

I picked up a chocolate cake and a cardamom bun. Both were absolutely delicious and of excellent quality. The woman behind the counter was very friendly and welcoming. Highly recommended, I will definitely be back. I really hope you'll be open more often in the future.
