Coulisse closed and its two owners split up. Simon Witmaar's half is Vita Lente, slow living, on a Jan Pieter Heijestraat corner that used to be a pizzeria. No fine dining this round: coffee and a sandwich from eleven, bar bites that grow with the evening, Mediterranean plates off the grill from his old sous-chef Bas Holthuizen.

Charcuterie comes off a bright red Berkel slicer. Sherry and vermouth get the attention wine usually gets, and you can order wine in 80 or 130ml glasses or a half-bottle carafe. Closed Tuesday and Wednesday.

I wanted to hate this place so badly. An Amsterdam restaurant serving spanish dishes without a spanish chef in sight? Hell no. Turns out: the cecina tasted like it does back home. The tortilla was the right amount of runny. And the pork was cooked perfectly. Everything was tasty and the Cava was pretty good too. I will definitely be back.

Really good vibe and food! A bit overpriced in my opinion even if i don’t mind spending on going out. High bill but worth trying if you don’t mind paying 60€ per person for a couple of wines and small bites.

The place is nice and the service was great. Wines are perfect. Just don’t get the bagna cauda, which is not real. The tortilla was pretty good even though it had mayonnaise on top 😅

Food is absolutely superb, all staff were friendly. Delicious bread and drinks too. Must visit! Vita Lente is going on my Amsterdam must-go list every trip in the future. Leek, tartar, divine. But everything we ordered was great. Also the bread from Wolf!
