Ten shops in, and finally one in the old town

Bakkerij Paulissen has been baking around Maastricht for years, with shops in Wyck, Heer, Wittevrouwenveld, Biesland, Malberg and Daalhof. Never once in the old town, until the tenth shop opened at Nieuwstraat 5-7, on the lane between the Markt and the Grote Staat.

The range is what a Limburg bakery gets judged on: sourdough and everyday loaves, pastry, and vlaai, the flat fruit tart that counts as the regional cake here. It's a counter shop with a small sit-down corner, not a full lunchroom.
