A wine bar pop-up filling the space Brasserie Sperber left empty for two years

Cork & Fork opened on Münzgasse on November 4, 2025, from restaurateurs Pascal Meister and Yannick Hänggi. The space belonged to Brasserie Sperber, a Spalenberg fixture that shut its doors in September 2023 and sat dark for two years before this took over.

The room keeps a rustic wine-bar look: wooden tables, barrels used as decor, a cheese counter, shelves stocked with bottles. It's running as a pop-up on a one-year lease with an option to extend, pairing a rotating five-to-seven-dish bistro menu with a wine list built around the bar's name.

The wine list is the most interesting in Basel city. Pascal, the passionate sommelier has intensive knowledge of what he is doing and has a wide range of very good wines with the best price quality. The concept of tavolata, to share all the different dishes allows the guests to try the many different dishes from the menu. The menu is not meant to be long and large, but to concentrate on the essential which is in season and locally sourced. The ambiance of dining on the terrace in the middle of the city on a warm evening, with a glass of great wine, is all that one needs !! Will be back again and again !

Cork & Fork in Basel was a great surprise. They have a huge wine selection, but we weren’t in the mood and asked for beer—and to our surprise, they had two of our favorites: Kronenbourg Blanc and Grimbergen. Not something you expect from a wine-focused place, but they delivered. The food was excellent. The beef tartare was one of the best I’ve had—perfectly balanced and fresh. The Korean wings were spot on, and the homemade focaccia is absolutely worth it. The team was kind and responsive. Great flexibility, great execution. Thank you! Highly recommend.

By far the best bistro food in all of Basel. I normally don’t order salad but theirs is excellent. The chicken was delicious and the dirty potato was the star. I also tried the gnocchi - incredible. Wish I took photos 😭
