A honey and mead bar on Norfolk Square
Apiary opened on Norfolk Square on 15 May 2024, and it runs bees and honey through the whole menu rather than as a one-off gimmick. The cocktail list and wine menu both make room for honey and mead alongside the usual wine-by-the-glass options.
Norfolk Square sits on the West Hill side of Brighton, a quieter and more residential stretch than the Lanes or North Laine. That gives Apiary a different crowd than the tourist-heavy bars near the seafront.

Our first visit to Apiary. We had ham hock croquettes and smacked cucumber to start; then for mains we shared beef carpaccio, trout and bream with a bowl of crispy new potatoes. For dessert we had the honey toast. Each dish was beautifully presented and each dish was faultless in taste - all the flavours were perfect and you can sense the dishes were created and cooked with love. One of the best meals we've had beginning to end. Alistair was exceptional - attentive but in a non-hassling, friendly way. Would definitely recommend.

Fantastic honey-themed cocktails: Delicate, balanced flavours. Superb service. Tasting menu is great value and ALL the dishes are lovely with a hint of honey. Loved the “green goddess” flavour on the Burrata. Bavette and roast potatoes were out of this world !

Honestly, such a lovely little spot. Apiary just feels a bit different in the best way – really cosy, relaxed, and clearly a lot of thought has gone into everything. The honey theme could easily feel a bit gimmicky, but it really doesn’t. It’s subtle and actually adds something, especially with the cocktails – they’re genuinely some of the most interesting drinks I’ve had in Brighton. You can tell they’ve put proper effort into getting the balance right. Food-wise, everything we had was fresh and really well done. Nothing over the top, just good quality ingredients and flavours that work. The honey is used in a really smart way rather than it being too much. The atmosphere is a big part of it too – it’s small and intimate without feeling cramped, and it just has a nice vibe for catching up with friends or going on a date. Staff were also really friendly and knew their stuff, which always makes a difference. Definitely somewhere I’d go back to, and I’ve already recommended it to a few people!

Exceptional food. Service friendly and knowledgeable and surroundings are great, everything has a hint towards honey and bees (even the soap in the toilets).

Noémie and Alistair’s space is absolutely beautiful, and we felt so fortunate to have it exclusively for our evening wedding celebrations. From start to finish, communication was clear, professional, and reassuring. We were especially grateful for the thoughtful accommodations around the menu, accessibility, and decorations. The food and cocktails were exceptional, and the whole team made us feel genuinely cared for. We left feeling full, happy, and very grateful. Thank you for helping to make our day so special. 🐝💛
