Zero-waste cocktails from a Kioku and Nipperkin alum

The drinks here don't just talk sustainability, they run on it: ingredients get used closed-loop across the whole menu, not as a garnish on the marketing. The bartender behind it cut his teeth at Kioku Bar at The OWO and Nipperkin, two of London's more technically minded bars.

Food leans into what the bar calls elevated American classics, which in practice means you're eating properly, not picking at a bowl of nuts. Mercer Street sits in the quieter stretch of Covent Garden, between Seven Dials and Long Acre.

Cato is one of the best cocktail bars we’ve been to in a long time. It’s a welcoming yet fancy atmosphere with carefully composed and unique cocktails. It’s clear that the bartender who served us—Angelo—is a seasoned pro who knows his craft backwards and forwards.

I loved the bar and atmosphere!! Been here three times in a month if that doesn’t tell you the dedication. Adele has hosted us every time with amazing knowledge, hospitality, and humour. Absolutely love LoVe LOVE the bar. My new favourite in London - I mean, what’s not to love?

Absolutely incredible We loved it so much we went two days in a row Amazing martinis, amazing cocktails and knowledgable bar staff, attentive wait staff and great bar snacks (get the HUGE olives!) The vibe is quiet, jazzy and classy. Absolute VIBES

Best and most underrated bar in london. Creative and balanced, great ingredients, everything you could ask for. Big shoutout to big diff and Angelos, very knowledgeable and accommodating. Do yourself a favour and visit!
